What Spices And How Much Should I Put In This Chili?
I’m cooking for 20 people and so far here’s what I have. I’m just not sure how much chili powder and others spices to put in. Keep in mind, it’s mostly for old people so it needs to be a little mild.
5lb lean ground beef
5 onions
5 green bell peppers
5 cans of kidney beans
5 large cans of stewed tomatoes
7 cans 30oz tomato sauce
5 small cans tomato paste
Also, I have to cook it in a big electric skillet/pan thing. We have a crock pot as well but I’m not sure that much would fit in it. How long should I cook it in the big electric cooker? Thanks for any help!



I would start with 5 Tablespoons of Chile Powder and 2 tablespoons of Cumin, 2 teaspoons of garlic salt. If this is for older folks, I wouldn’t add any red pepper flakes.
You can brown the meat in the pan and then put it in the cooker for 1/2 hour or so with the veggies and other ingredients. Mix your spices with about 1 cup of water then pour them in. Taste after a little bit of mixing and adjust seasoning as needed, the Chile Powder and Cumin will give it more Chile Flavor.
You could go for a chili packet and “guesstimate” how many packets you would need for the amount of other ingredients. I use chili powder sometimes, although I have never made chili in the quantities you mention. The best way to get it seasoned correctly is to taste it. I think you probably need to add some salt also.
As far as cooking, if you cook it on high, I would think 4 hours would be plenty. You can tell when it has cooked enough, the onions become translucent. You might want to saute the bell peppers and onion in some olive oil before adding to haste their speed of cooking.
