what is the difference in cooking with gas ovens vs electric ovens?
at home i use a gas oven and learned how to bake really well with it. recently tried baking a cake with an electric oven and it didnt go so well. i didnt do anything differently, but the top of the cake started to brown to fast and the inside wasnt cooking at the same speed so i ended up with a hard slightly burnt top of the cake. is the temperature or time different on electrical ovens than it is with gas ovens? or is there anything i can do to fix this problem so my cakes come out better?



I think gas ovens/stoves are hotter than electric ones. A plus is that when you have a gas stove, you can light it with a match when the power is out. It helps, trust me.
It has to do with how the heat is transferred inside the oven. Anytime you cook with gas (oven, stove top, grill) it is alot easier to maintain a certain temperature and transfer the heat around. In an electric oven there is a coil either at the top, bottom or both and it creating heat. Then a fan in back has to blow the hot air around and it can become very inconsistent. I’m not sure why but no bakery uses electric stoves or ovens.
In terms of fixing the problem you will have to play around with the heat temp and time. Try starting at a lower temp and then turning it up so it doesn’t brown too fast or using aluminum foil over the top to keep from burning and locking heat in.
Get two or three oven thermometers, and check for temperature differences. Maybe just use the lower rack, or lower the temperature.
Could have been the upper heating element was working, and the lower one failed.
Different kinds of pans make a difference, as does pre-heating.
Gas heats up quicker than electric so you might need to wait longer for electric before putting food in. Also it sounds like you might have a fan-forced oven at home which will distribute the heat evenly throughout, whereas the other oven probably isn’t, so it is hotter at the top. Fan-forced normally are set at 10-15 degrees Celsius lower than non fan-forced. Try putting the cake lower in the other oven next time.
