this small house, maybe 700 square foot. I need to replace the breaker box, will a 100 amp work or 200 amp. the only 220 will be the kitchen stove and an instant hot water heater and laundry dryer. thanks for any help

If you are going to replace the old fuse panel anyway, why not spend the few dollar in difference and upgrade to a 150 amp or larger panel? You may never use all that capacity, on the other hand it may be just the thing a future buyer is looking for. I don’t know labor costs in your area, but I bet the difference between a 100 am box and a 150 amp box with the same number of breakers installed is less than $100. Add breakers as you need them. You have to replace the mast and meter socket anyway for either box, so this upgrade is a no-brainer.
100 amp is fine and approved by code. If your service entrance is an old 60amp, you need to replace the entire service entrance from the top of the mast (above the meter) to the breaker box, this would inclide all wiring, conduit, and meter socket.
100 should be adequate for that size home. 200 amp is seen in larger homes (2000 sq ft+) often in the higher price ranges.
