Hi, I do not have an oven, stove top or slow cooker. I only have a roaster oven for now, and would like to cook in it more often. Does anyone have some good recipes that can be roasted, preferably one-dish? Ty!

You can use it like a regular oven. Just set temp and cover.

It can be used like a big slow cooker also.
I have an ancient one, and it came with covered glass dishes, making it possible to cook an entire meal by putting the dishes inside, based on cooking requirements and stacking them up. Think of it as your oven, only smaller.
Italian Chicken Bake
2 to 3 lbs. whole chicken, cut into parts
1 can diced or stewed tomatoes
4 potatoes, peeled and quartered
1 onion, quartered
1 small can mushrooms, drained
2 cups sliced zucchini
1/8 tsp. garlic powder
1/4 tsp. dried basil
1/4 tsp. salt or less
1. Preheat oven to 350 degrees F.
2. Wash and cut up chicken.
3. Place chicken into a small roasting pan or Dutch oven.
4. Add potatoes, onions, mushrooms, zucchini, tomatoes and seasoning.
5. Cover and bake for 45 to 55 minutes or until chicken is done.
6. Serve with Italian green beans if desired.
Slow Cooker Italian Sausage Subs
1 lb. Italian Sausage
1 red pepper, sliced
1 green pepper, sliced
1 small onion, sliced
1 jar (26 oz.) tomato pasta sauce
5 sub buns
5 slices provolone cheese
1. In a non-stick skillet over medium heat, cook sausage until brown. 2. Place in crock pot.
3. Add peppers and onion.
4. Top with pasta sauce.
5. Cover and cook on low 4-6 hours until sausage is fully cooked.
6. Place sausage in warmed buns.
7. Top with peppers, onions, pasta sauce and cheese.
